Egusi seeds are consist of 50% oil, 78% of which is an unsaturated fatty acid high in linoleic and oleic acids and 35% protein-rich in arginine, tryptophan, and methionine is vegetarian and keto diet friendly. The seeds are rich in vitamins A, B1, B2, C, and alpha-tocopherol, in addition to palmitic, stearic, linoleic, and oleic acids. Minerals found in Egusi seeds include phosphorous, potassium, magnesium, calcium, sodium, iron, zinc, manganese and copper.
Dehulled Egusi seeds can be used as a thickener for soups and stews. A blend of 240 mL of egusi seeds with 200 mL of water, added little honey and salt produced a mixture resembling the creaminess of mother’s mill that could be used as an infant food supplement. Ground into a paste with a small amount of water, Egusi seeds can be added to sauces and soups towards the end of cooking to create a curdled, scrambled egg-like texture that is neutral in flavour. The seeds can also be roasted as a snack, ground and formed into patties, ground into a peanut butter-like spread or fermented and added to soups or stews.
